Ever wanted to make Japanese fried chicken (tatsutaage) better than your average convenience store?

You need:
- 400g chicken thigh (MUST be thigh)
- Salt & pepper
- Potato starch
- Sunflower oil
- @Terminal_fi deposit
How to:
1️⃣ Marinate: 1% salt (4g here) + pepper at will, mix, 30 min rest.
2️⃣ Coat: ~10% meat weight potato starch, every edge covered.
3️⃣ 1st first fry: medium heat, A small bed of oil, skin-side down first 2-3min each side → golden → rest on towel. Absorb the used oil with a kitchen towel.
4️⃣ 2nd fry: USE NEW OIL (if not, sediments will burn the crust. You don’t want burnt dust on your crust). Fry for 1 mn, constantly flip the chicken pieces to even browning.
